My Summer Citrus & Ginger Elixir...







Summer Hits and the Thirst Begins...

To many times we go for the sugar filled Juices, Fizzy Pop, and Even the KEG building BEER! 

So, I have decided that I am on a quest of thirst quenching, refreshing and hydrating drinks for this summer. We all know water is good for us! This drink does contain water, but sometimes we just need something a little more! So here Is the First of my many to come tasty drinks!







Recipe:

Juice of one lemon
Juice of one sweet mandarin
1 nub of ginger 
1/2 cup of ice
Spring water (sparkling or not) to top

I juiced my lemon, ginger and mandarin. Added my citrus juice to my blender with my ice and blitzed it up! I followed by topping my now slushy like mix with my water. This mix made two beautiful refreshing summer drinks. If you like things a little sweeter you could add a teaspoon of raw honey to keep it on the RAW side!

Indian Spiced Raw Carrot Salad





Easy as!
I thought I would jump back in with some quick fresh and fast recipes!

I've changed a few things in the way I eat! The recipes I'll be posting for the next little while are based on time! I dont have much of it at the moment. 

Im sure you all are in the same boat. I'm trying to live with as much raw in my life as I can! So here is the first 5 minute meal I made tonight for you! I ate this with blackened salmon but didn't have time to post the salmon, but the salad is a stunner!




Recipe:

1/2 one Large Red Onion (sliced)
5 Large Organic Carrots (spiraled, Julianne, or even grated)
4 springs of Fresh cilantro (roughly chopped)
1 teaspoon Fresh ginger (grated finely)
Flesh of 1 young coconut (drink the water, yum!)
3 tsp Raw Honey
2 tbsp Cold pressed Olive Oil
1/2 cup Organic Raisins 
1/2 Raw Almonds (I slivered mine by hand)
1 tsp Mild Curry powder
1 tsp Ground Coriander
1 tsp Ground Cumin 
1/2 tsp Turmeric
1/2 tsp Celtic Sea Salt


Scrape the flesh out of your coconut using the back of a large spoon!



Place the coconut flesh, salt, ground spices, honey and Olive oil in a blender and blitz until smooth and creamy


Grate, peel, spiral, julianne your carrot, add it to a bowl with your raisins, slivered almonds and red onion. Fold your sauce through and lastly your roughly chopped cilantro. 



BOOM!


There you have it! A five minute salad that will impress your taste buds and everyone! 
This Salad garnishes it self. It would accompany almost anything or just eat the bowl to your self!

Flavor Packed Raw Beet-Root Dip...






So simple and Packed with flavor!


Ingredients...

2x medium raw beet-root (peeled & diced)
1/4 cup soaked macadamia nuts (soaked 12 hrs)
2x lg cloves garlic
1x tbsp olive oil
6x lg basil leaves
1 tbsp lemon juice
1/2 cup water
1/2 a ripe avocado
1/2 tsp celtic sea salt
1/2 tsp ground black pepper 




 1. Ingredient lot 1



 2. Ingredient lot 2



 3. Place ingredient lot 1 in your food processor and blitz until smooth



 4. Now add your 2nd lot of ingredients and blitz until creamy and smooth...



This dip is so versatile and so fantastically fresh! Spread it on your nori wraps, dip your veggies in it, the list goes on!

Carob, Goji, Cranberry, & Chai Pudding






Just what I needed for my pre work out snack.
I don't often get a chance to eat lunch at work, and my tummy doesn't like too much before I work out. This sits just fine, and is great for energy.


Ingredients...

1/4 cup chai seeds (I used white)
4 tbsp Almond milk (or any you prefer)
4 tsp carob powder
1 tbsp dried cranberries
1 tbsp dried goji berries
1 tsp raw honey
1/2 cup boiled water



 1. Ingredients 



 2. Place all ingredients in a mixing bowl



3. Mix well. Set aside for 5 minutes, and EAT...


I top mine with a little more almond milk!
FANTASTIC.

Raw Beetroot Salad...




We love this salad! 
I was making this years back before I became "paleo". A great way to get some raw veggies on the table. Plus its beautiful to look at!


Ingredients...

1/4 cup apple cider vinegar
1/4 cup home made egg mayo or aioli
1 tbsp Dijon mustard
1 tbsp flax seed oil
2 medium carrots (cut into half moons)
1 small red onion (sliced  thin)
1 cup of cherry tomato's (halved)  
1 bunch of parley (chopped)
1 small red capsicum (Julianne)   
2 medium raw beetroot (Julianne) 
Salt and cracked Black pepper to tastes
 
 
 
 
1. Ingredients.


 
 2. Julianne your beetroots raw.



 3. All veggies prepped. In a Large Salad bowl.



4. Add Mayo, Dijon, Apple cider vinegar, and Flax oil to your salad and mix. Salt and pepper to your liking.


There you have it! 
Beautiful to look at, crunchy in your mouth, and should please most.

Goji, Dark Chocolate and Sesame Energy Bites...




I was feeling like I needed a Sweetie...


Ingredients...

1 cup of white sesame seeds
1 cup of shredded coconut
1/2 cup goji berrys
1 tsp cinnamon
1/2 cup macadamia nuts  
75gms of 85% dark chocolate
1 tbsp coconut milk (or what ever you have)
1 tbsp coconut oil
2 tbsp raw creamed bush honey

extra 1/4 cup sesame seeds
extra 1/4 cup shredded coconut
 
 
 
 1. Place the sesame seeds, shredded coconut, goji's, and cinnamon in a large mixing bowl and mix well.



 2. Place your macadamia nuts, chocolate, and coconut milk in a blender or food processor until well blitzed.



 3. Place the raw honey and coconut oil in a medium sized sauce pan on medium heat.



 4. Melt the honey and oil.



 5. Once your melted the above add the goji and sesame mix to the sauce pan. Keep at heat until you have slightly toasted them and they are just golden.



 6. Add your sesame mix, macadamia and chocolate mix to a mixing bowl straight away while the sesame mix is still hot.



 7. Mix the two together and set aside for around 10 minutes to cool so that you can form them into balls.



8. Place your "extra's" in a small bowl. Roll your mix into your choice of sized balls and roll them in your extra's mix!


There you have it! A sweetie that will give you enough energy to go work it back off!

Raspberry & Double Chocolate "Cheese" Cake...

  


Apparently this is my best Paleo Dessert yet!
So my critic tells me...
Yummo!


Ingredients...

Base

1 cup almonds (raw)
75gms 85% chocolate
1/2 cup raisins
8 dates (dried)
2 tbsp water

Filling

3 cups cashew nuts soaked (raw)
300gm raspberry's (I used frozen)
juice of 1 lemon
1/4 cup raw agave 
1/2 cup coconut oil
1/3 cup almond milk

Topping

75 gms 85% chocolate
1 tbsp coconut oil
1/4 cup coconut milk



 1. Soak cashews for 1-2 hours



 2. Place base ingredients in a food processor and blitz



 3. Press Base out in a 10inch spring form greased cake tin



 4. Place all filling ingredients in a food processor or a blender and blitz until smooth and creamy



 5. Your filling should look as above



 6. Completely and evenly top your base with your filling



 7. Place your topping ingredients in a small sauce pan and at medium heat melt. I used my whiz stick (or whisk at fast pace) to incorporate your ingredients 



 8. Should be shinny and all blended together



9. Top your "Cheese" cake with you chocolate and chill for 2 hours



Well, this would trick anyone into thinking this was a dairy made cheese cake! I'd say this would please most! 
What a stunning dessert...

Creamy Almond and Spinach Spread...




This is a great component...


Ingredients...

1 cup of almonds (soaked over night in water)
1/2 fresh water
2 tbsp olive oil
75gm spinach
5 cloves of garlic
1 tsp ground black pepper
1 tsp celtic sea salt




 
1. Soaked (over night) almonds! Drain them from there soaking water.



 2. Place your soaked almonds in a food processor or blender with the 1/2 cup of water and blend until creamy (I left mine going for around 3 minutes).



 3. Once almonds are creamy add the rest of your ingredients and blend until creamed and well combined. 



 Should be looking like above!
 
 
 
This is so simply and you can do so much with this flavor packed spread. I spread it on my rolled omelet's, as a spread in my nori wraps, stuff vegetables with it, mix it through mash for extra flavor and creaminess... Endless Options.

Paleo Tabouli...




I have to admit, Even I was impressed with this one. Better than real tabouli hands down.


Ingredients...

1/2 one head of cauliflower
1x Zucchini (or cucumber I packed mine for lunch the next day and knew the cucumber would make my salad a little soggy over night)
1x overflowing cup of Eumundi tomatoes (or cherry or grape I just like the zingy flavor they add) (quartered)
1x small red onion (diced small)
4x garlic cloves (grated)
1x packed cup of parsley
juice of one lemon
1 tbsp of lemon zest
2 tbsp apple cider vinegar
1 tsp cracked black pepper
1 tsp Celtic sea salt
3 tbsp Olive oil



 
 Ingredients...



 1. Place the cauliflower and parsley in your food processor or blender and blitz!



 2. Your cauliflower and parsley should look like this now. Place them in a large mixing bowl.



 3. Add your quartered tomato's.



 4. Follow by adding your finely diced zucchini and red onion.



5. To finish add your lemon zest, grated garlic, apple cider vinegar, Olive Oil, Salt and Cracked Pepper.With a Large salad spoon Mix the lot together!


There you go! A low carbohydrate flavor packed salad. Add some cooked meat with it, have it as a side, top it with falafel! Endless options for such a great, and easy salad!
