Apple & Fig Pinwheels....







Sunday afternoon play around in the kitchen, And here is what I came up with! 


Ingredients...
Pre heat oven to fan bake at 150c
Base:
1/2 cup extra virgin coconut oil (soft but not liquid form)
2 cups almond meal
1 cup semi blitzed pecans
1/2 cup apple sauce
1 vanilla pod (scraped out) 

Filling:
10 dehydrated Figs (blitzed)
1/2 cup dates (blitzed)
1 cup grated red apple (skin on)
1 tsp cinnamon
1 tsp lemon juice
1/2 cup flax meal 



 1. Base ingredients ready in a mixing bowl.


 2. Base ingredients all mixed up. Place in the freezer to firm up while your making the filling.


 3. Filling ingredients all prepped and ready.


 4. Filling ingredients all mixed up and ready. Place in the freezer to firm up while your rolling out the base.


 5. Get your base into a rectangular shape with some plastic wrap layed out beneath. 


 6. Now roll the base out. Around 1cm thick.


 7. Get your now chilled filling out of the freezer and spread it evenly over your base.


 8. Using your plastic wrap to help you (that is under your base) roll your pinwheel.


 9. With a serrated knife cut your pin wheels out (around 2cm thick each). I was able to get 20 out of my mixture.


 10. Place your now cut, and ready to bake pinwheels on a well greased oven tray. Leaving a little gap in between each. Bake for 20-30 minutes or until golden.


11. Pinwheels golden and baked in above picture. Allow your pinwheels to cool completely before eating. The coconut oil in the base is the only binding ingredient, and to hold it needs to become firm again. I cooled mine in the fridge for around 30 minutes.

These get better as the day goes by. 
There is only fruit for sweetening in them, and  they are so very simple to make!
They look amazing and the smells that linger through your house are divine!

Carob, Goji, Cranberry, & Chai Pudding






Just what I needed for my pre work out snack.
I don't often get a chance to eat lunch at work, and my tummy doesn't like too much before I work out. This sits just fine, and is great for energy.


Ingredients...

1/4 cup chai seeds (I used white)
4 tbsp Almond milk (or any you prefer)
4 tsp carob powder
1 tbsp dried cranberries
1 tbsp dried goji berries
1 tsp raw honey
1/2 cup boiled water



 1. Ingredients 



 2. Place all ingredients in a mixing bowl



3. Mix well. Set aside for 5 minutes, and EAT...


I top mine with a little more almond milk!
FANTASTIC.

Strawberrys and Cashew Creamed Chocolate Mousse




I was commanded that a sweet treat was in need...So with our powers combined... 
A sweet treat was created...


Ingredients...

3/4 cup raw cashew nuts
1/2 cup raw walnuts
3/4 cup almond milk
4 tbsp dutch dark cocoa powder
1/3 cup agave
1 heaped tbsp coconut oil
50gm 85% dark cocolate

250gm strawberry's 
   



 1. Ingredients + 50gms dark chocolate.



 2. Place all ingredients apart from strawberry's and chocolate in a food processor and blitz until smooth and creamy.



 3. In a small sauce pan melt your dark chocolate.



 4. Add your chocolate to your blitzed ingredients and blitz again. Ensure the two are now well combined.



 5. Dived into 4. I poured mine in 200gm ceramic ramekins. Place in the freezer to chill for around 15minutes.



6. Serve them with strawberry's or even raspberry's. The mousse is very rich and needs the tart berry to level it out!

Wild Blueberry & Apple Tart...




Warm Wild Blueberry and Apple Tart.
Nothing better than a warm tart on a cool night!
 


Ingredients...

Pre-Heat Oven to 180c
 
Crust:
1 cup Raw pecan
10 Dried dates
1 egg
Filling:
1/4 cup dried wild Blueberrys
1/4 sup Apple juice concentrate
1 tsp Cinnamon 
2 grated Granny smith apples (skins and all)
1/3 cup Ground almond
2 tbsp flaked almonds (to top tart)
1 8inch pie/tart tin




 1. Place crust ingredients in a blender or food processor and blitz.




 
2. Grease your tin and press your now ready crust mix out.




 3. Filling ingredients.



 4. Filling ingredients all prepped and mixed in a bowl.



 5. Add your filling to your tart shell.



6. Top your tart with your flaked almonds and bake at 180c for around 20-25 mnutes or until golden.


So quick and easy. I think this took me 5 minutes to get ready and the rest was in the baking time!

Goji, Dark Chocolate and Sesame Energy Bites...




I was feeling like I needed a Sweetie...


Ingredients...

1 cup of white sesame seeds
1 cup of shredded coconut
1/2 cup goji berrys
1 tsp cinnamon
1/2 cup macadamia nuts  
75gms of 85% dark chocolate
1 tbsp coconut milk (or what ever you have)
1 tbsp coconut oil
2 tbsp raw creamed bush honey

extra 1/4 cup sesame seeds
extra 1/4 cup shredded coconut
 
 
 
 1. Place the sesame seeds, shredded coconut, goji's, and cinnamon in a large mixing bowl and mix well.



 2. Place your macadamia nuts, chocolate, and coconut milk in a blender or food processor until well blitzed.



 3. Place the raw honey and coconut oil in a medium sized sauce pan on medium heat.



 4. Melt the honey and oil.



 5. Once your melted the above add the goji and sesame mix to the sauce pan. Keep at heat until you have slightly toasted them and they are just golden.



 6. Add your sesame mix, macadamia and chocolate mix to a mixing bowl straight away while the sesame mix is still hot.



 7. Mix the two together and set aside for around 10 minutes to cool so that you can form them into balls.



8. Place your "extra's" in a small bowl. Roll your mix into your choice of sized balls and roll them in your extra's mix!


There you have it! A sweetie that will give you enough energy to go work it back off!

Raspberry & Double Chocolate "Cheese" Cake...

  


Apparently this is my best Paleo Dessert yet!
So my critic tells me...
Yummo!


Ingredients...

Base

1 cup almonds (raw)
75gms 85% chocolate
1/2 cup raisins
8 dates (dried)
2 tbsp water

Filling

3 cups cashew nuts soaked (raw)
300gm raspberry's (I used frozen)
juice of 1 lemon
1/4 cup raw agave 
1/2 cup coconut oil
1/3 cup almond milk

Topping

75 gms 85% chocolate
1 tbsp coconut oil
1/4 cup coconut milk



 1. Soak cashews for 1-2 hours



 2. Place base ingredients in a food processor and blitz



 3. Press Base out in a 10inch spring form greased cake tin



 4. Place all filling ingredients in a food processor or a blender and blitz until smooth and creamy



 5. Your filling should look as above



 6. Completely and evenly top your base with your filling



 7. Place your topping ingredients in a small sauce pan and at medium heat melt. I used my whiz stick (or whisk at fast pace) to incorporate your ingredients 



 8. Should be shinny and all blended together



9. Top your "Cheese" cake with you chocolate and chill for 2 hours



Well, this would trick anyone into thinking this was a dairy made cheese cake! I'd say this would please most! 
What a stunning dessert...

Coconut Milk Yogurt...




Quick and Easy!


Ingredients...

1 tin of full fat coconut milk
1 to 2 pro-biotic capsules (dependent on how thick you would like your yogurt. I use 2 I like my yogurt really thick.)


Processes...

1. Place your tin of coconut milk in a bowl.
2. Open your capsule (or two) over your coconut milk.
3. With a whisk mix the capsule through your coconut milk.
4. Place your coconut milk in your fridge uncovered over night.


There is so many ways you can have this yogurt!


  
I split my yogurt mix in half. I used one half for sweet and the other for savory. 


1. My sweet yogurt! I added 1 tsp of sweetener (I used raw honey) and 1/2 cup of cherry's. I blended the cherry's in my blender and folded them through my yogurt (this was enough for 2 serves of yogurt).

2. I made a savory yogurt dressing with my other half. I made a garlic, cucumber and dill dressing. I finely chopped 1 tbsp of fresh dill, 1/4 of a continental cucumber, and  3 garlic cloves. I then folded them through my yogurt. I finished by adding 1 tbsp of olive oil, 1tsp of Celtic sea salt, and 1 tsp ground black pepper. We had this with fish! Was fantastic.
