Melt in Your Mouth Slow Cooked Pork In a Creamy White Sauce...




A Great Winter Meal. So tender and flavor packed!


Ingredients...

500gm pork loin 
1/4 cup white balsamic vinegar
1 cup almond milk
1 cup coconut cream
1 tbsp fresh thyme
6 garlic cloves diced finely
1 large brown onion diced
6 large button mushrooms
1 tsp celtic sea salt
1 tsp ground black pepper
1/2 tsp nutmeg
1/2 tsp cinnamon 
1 cup chicken stock (fresh if you have it) Or water will do
  


 
 Ingredients...



 1. Saute your pork on med/high


 
 2. Add your diced onion, garlic and fresh thyme allow to brown.



 3. Once you've browned your onions and garlic slightly, Add your mushrooms, spices, salt and pepper and white balsamic vinegar. Allow just to simmer.



4. Once you've reached simmering point on above step add your Coconut cream, Almond milk, Stock (or water). Reduce heat to low and allow to simmer for around one hour. 


This is stunning! I ate this making mmm noises the whole time! I enjoyed this with my parsnip mash that too is on my blog.

Parsnip Mash With Lemon, Garlic, and Thyme...




A great versatile mash that will go with about anything!


Ingredients...

5 medium peeled parsnips
1/2 the juice of one lemon
1 tbsp fresh thyme 
5 cloves of garlic
2 tbsp olive oil
1 tsp Celtic sea salt
1 tsp ground black pepper



 
 Ingredients...



 1. Boil your peeled parsnips, and garlic cloves until soft.



 2. Once soft strain your parsnips and garlic place in a bowl.



3. Now with a masher, whiz stick or mouli mash your now soft garlic cloves and parsnips. Once smooth add your olive oil, lemon juice, salt and pepper and fresh thyme.


There you have it. A very tasty accompaniment to any meal.
