Mediterranean Omelette For One...




Simple, Flavor packed and Filling. What more could you want!


Ingredients...

3 Eggs (whisked in a bowl)
1 Roasted artichoke Heart
4 Lg Black Olives
1/2 cup Baby Spinach
4 Grape (or cherry) tomoatoes
1 heaped tbsp Almond and Spinach Spread (also on my blog)
   



 Ingredients...



 1. Place your whisked eggs on a hot heated flat oven safe pan. Cook until the bottom of your thin omelette is firm.



 2. Place your Omelette under your grill (one rack under) until the top has set.



 3. Spread your Almond and Spinach spread over the omelette.



 4. First place your spinach down, following by topping with the rest of your ingredients. Place under your grill until your spinach has just wilted.



 5. Now as if rolling a wrap, roll your omelette. 



Your rolled omelette should look like this.


This is a GREAT quick, and filling meal.

Creamy Almond and Spinach Spread...




This is a great component...


Ingredients...

1 cup of almonds (soaked over night in water)
1/2 fresh water
2 tbsp olive oil
75gm spinach
5 cloves of garlic
1 tsp ground black pepper
1 tsp celtic sea salt




 
1. Soaked (over night) almonds! Drain them from there soaking water.



 2. Place your soaked almonds in a food processor or blender with the 1/2 cup of water and blend until creamy (I left mine going for around 3 minutes).



 3. Once almonds are creamy add the rest of your ingredients and blend until creamed and well combined. 



 Should be looking like above!
 
 
 
This is so simply and you can do so much with this flavor packed spread. I spread it on my rolled omelet's, as a spread in my nori wraps, stuff vegetables with it, mix it through mash for extra flavor and creaminess... Endless Options.

Coconut Milk Yogurt...




Quick and Easy!


Ingredients...

1 tin of full fat coconut milk
1 to 2 pro-biotic capsules (dependent on how thick you would like your yogurt. I use 2 I like my yogurt really thick.)


Processes...

1. Place your tin of coconut milk in a bowl.
2. Open your capsule (or two) over your coconut milk.
3. With a whisk mix the capsule through your coconut milk.
4. Place your coconut milk in your fridge uncovered over night.


There is so many ways you can have this yogurt!


  
I split my yogurt mix in half. I used one half for sweet and the other for savory. 


1. My sweet yogurt! I added 1 tsp of sweetener (I used raw honey) and 1/2 cup of cherry's. I blended the cherry's in my blender and folded them through my yogurt (this was enough for 2 serves of yogurt).

2. I made a savory yogurt dressing with my other half. I made a garlic, cucumber and dill dressing. I finely chopped 1 tbsp of fresh dill, 1/4 of a continental cucumber, and  3 garlic cloves. I then folded them through my yogurt. I finished by adding 1 tbsp of olive oil, 1tsp of Celtic sea salt, and 1 tsp ground black pepper. We had this with fish! Was fantastic.
