Spanish Lemon & Paprika Infused Chicken Soup...




Nothing like a warm soup on a cold day!



Ingredients...

1/4 cup chopped celery
1/4 a diced red capsicum
6 lg button mushrooms quartered
1 lg chicken breat diced small
5 cloves of miced garlic
2 tbsp of chopped parsley
juice of 1 lemon
1 red chili minced fine
2 heaped tbsp tomato paste
1 heaped tbsp smoked paprika
Celtic sea salt and Cracked black pepper to taste
 


   
 1. Ingredients prepped.



 2. Add your chicken to a medium sided oiled pot at medium heat.



 3. Once chicken is browned add the capsicum, celery, and button mushrooms and saute.



 4. Once Veggies are sauteed add your lemon juice, smoked paprika, parsley, garlic, chili, and ginger.



 5. Allow your spices to toast slightly.



6. Follow by adding the tomato paste and 2.5 cups of water (or fresh chicken stock). Allow to simmer for 10 minutes



This was Fantastic! 
Warmed me up and was so very satisfying. I added a dollop of coconut cream to the top of mine. It was just what it needed.

Goji, Dark Chocolate and Sesame Energy Bites...




I was feeling like I needed a Sweetie...


Ingredients...

1 cup of white sesame seeds
1 cup of shredded coconut
1/2 cup goji berrys
1 tsp cinnamon
1/2 cup macadamia nuts  
75gms of 85% dark chocolate
1 tbsp coconut milk (or what ever you have)
1 tbsp coconut oil
2 tbsp raw creamed bush honey

extra 1/4 cup sesame seeds
extra 1/4 cup shredded coconut
 
 
 
 1. Place the sesame seeds, shredded coconut, goji's, and cinnamon in a large mixing bowl and mix well.



 2. Place your macadamia nuts, chocolate, and coconut milk in a blender or food processor until well blitzed.



 3. Place the raw honey and coconut oil in a medium sized sauce pan on medium heat.



 4. Melt the honey and oil.



 5. Once your melted the above add the goji and sesame mix to the sauce pan. Keep at heat until you have slightly toasted them and they are just golden.



 6. Add your sesame mix, macadamia and chocolate mix to a mixing bowl straight away while the sesame mix is still hot.



 7. Mix the two together and set aside for around 10 minutes to cool so that you can form them into balls.



8. Place your "extra's" in a small bowl. Roll your mix into your choice of sized balls and roll them in your extra's mix!


There you have it! A sweetie that will give you enough energy to go work it back off!

Sesame Pork Skewers with Japanese Inspired Slaw...




I LOVE SESAME! 
This is a Great Fresh and Fast Meal!


Ingredients...

500gm pork fillet (you will also need skewers)

Skewer marinate ingredients...

1/8 cup olive oil
3 tsp sesame oil
zest and juice of one lime
1 tbsp of minced fresh ginger
3 cloves of garlic minced
1 tsp raw honey
2 tsp black sesame seeds
2 tsp white sesame seeds
1 tbsp Japanese plum vinegar
1/2 tsp celtic sea salt
1/2 tsp cracked black pepper

Slaw Ingredients...

1 small red capsicum
2 sprigs of celery
1 small red onion
1 tin (230gm) bamboo shoots
1/4 a red cabbage

Slaw dressing...

1 tbsp olive oil
4 tsp sesame oil
juice of one lime
3 tbsp Japanese plum vinegar
1 tsp raw honey
1 tsp black sesame seeds
3 minced garlic cloves
1 tsp minced fresh ginger
1/2 tsp powdered wasabi
salt and pepper to taste


   
 1. Slice your pork fillet into thin long strips.



 2. Skewer your pork.



 3. Place all your marinate ingredients in a bowl and mix well.



 4. Pour your marinate over your skewers and work it through gently with your hand. Set aside while making your slaw.



 5. Prepped slaw ingredients.



 6. Combine all your slaw dressing ingredients in a bowl and mix.



7. Place your prepped slaw veggies and dressing in a large bowl and mix well.



 8. Cook your skewers on a flat pan or grill at med/high. Only turn them once. Plate up your slaw and top with your sesame skewers!


I loved this. Fresh, Easy, Beautiful Flavor, and will impress anyone!

Sweet Potato Skins...




Sweet Potato Skins Topped with Crispy Bacon and Chives!


Ingredients...

Pre heat oven to 200c

4 Medium sized kumara (aka sweet potato) Baked

4 rashes of streaky bacon (diced)
1 cup of baby spinach (chopped)
1 sml red onion (diced)
2 garlic cloves (diced)
1 bunch of chives (chopped)
1 sml red capsicum
1 tsp cumin
1 tsp smoked paprika
celtic sea salt and pepper to taste


   
 1. Ingredients... (plus 4 baked sweet potato's)



 2. Ingredients Prepped



 3. Half your sweet potatoes and then with a small spoon, scoop out the kumara apart from a thin line around the edges. (be careful you don't want to tear the bottoms) Add the scooped kumara to your bowl of ingredients and smash together. 



4. Dived the bowl of ingredients into 8 parts and stuff all your sweet potatoes evenly. Pack them firmly. Place them on a greased oven tray and bake for around 20 minutes.


These are fantastic. Great for kids, entree's, take them to a bbq etc...
I topped mine with organic bbq sauce and my home made coconut yogurt.

Raspberry & Double Chocolate "Cheese" Cake...

  


Apparently this is my best Paleo Dessert yet!
So my critic tells me...
Yummo!


Ingredients...

Base

1 cup almonds (raw)
75gms 85% chocolate
1/2 cup raisins
8 dates (dried)
2 tbsp water

Filling

3 cups cashew nuts soaked (raw)
300gm raspberry's (I used frozen)
juice of 1 lemon
1/4 cup raw agave 
1/2 cup coconut oil
1/3 cup almond milk

Topping

75 gms 85% chocolate
1 tbsp coconut oil
1/4 cup coconut milk



 1. Soak cashews for 1-2 hours



 2. Place base ingredients in a food processor and blitz



 3. Press Base out in a 10inch spring form greased cake tin



 4. Place all filling ingredients in a food processor or a blender and blitz until smooth and creamy



 5. Your filling should look as above



 6. Completely and evenly top your base with your filling



 7. Place your topping ingredients in a small sauce pan and at medium heat melt. I used my whiz stick (or whisk at fast pace) to incorporate your ingredients 



 8. Should be shinny and all blended together



9. Top your "Cheese" cake with you chocolate and chill for 2 hours



Well, this would trick anyone into thinking this was a dairy made cheese cake! I'd say this would please most! 
What a stunning dessert...

Flax Seed Buns...




Flax Seed Buns!!


Ingredients...

Pre Heat Oven 180c
1 cup flax meal
1/3 cup coconut flour
1/3 cup almond meal
1 tsp baking soda
2 tsp baking powder
1/4 cup olive oil
1/4 cup apple cider vinegar 
1/4 cup warm water
5 egg whites
1tsp celtic sea salt


 1. Place all dry ingredients in a bowl.


 2. Add all wet ingredients to bowl and mix.


 3. Your dough should look like this now. Wet your hand, and roll (in your hands) 4 large balls.


5. Place your rolled out buns on a greased baking tray. I used the egg yolks and brushed a little on the top to make them golden on the top. I also put black sesame seeds and Pepita seeds on the top. Now bake for around 25minutes or until the center is firm and they are golden!



BUNS, BUNS, BUNS!
These are great! You could make bacon and egg rolls, take them on a picnic, have them with burgers!
