Macadamia butter and dark chocolate chip cookies


I do have to say I enjoy a Sunday afternoon treat and these little puppy's do go down nicely...

Ingredients:

2 1/2 cups of organic ground almond
1/2 tsp hand harvested Celtic sea salt   
1/2 tsp baking soda
1/2 cup macadamia butter
1 tbsp coconut oil
2 heaped tbsp raw bush honey
8 fresh dates pited and blended into a paste
1/2 cup of the darkest chocolate you can find (I used dark french in block form and chipped it with a knife)
1/2 cup flaked almonds


Pre Heat your Oven before you begin at 180c

Step 1.

In a Large Mixing bowl combine ground almond, salt, and baking soda. Mix with your fingers really getting that salt and soda through. As the ground almond is rather coarse you'll really need to give it a work through to ensure its distributed well.
Step 2.

In a Medium size Mixing bowl combine macadamia butter, honey, date paste, and coconut oil. Wisk until all are combined.

Step 3.

Into the large mixing bowl that contains your dry ingredients add flaked almonds, and chocolate chips.

Step 4.
Combine the wet ingredient into the dry and mix well. Once you have the 2 well combined let stand for just 5 minutes. As ground almond is very absorbent the mixture will become more combined with a little rest. While resting your cookie mix be greasing your cookie tray. I used olive oil spray. Now Your cookies should be at "ball form" (means if you were to grab a hand full and squeeze it it would more than likely stay in the shape you've formed it into). I spooned desert size scoops of cookie dough into my hand rolled them semi ball shape then flattened them, and set them one inch apart on the cookie sheets. These cookie's will need flattening as almond is very moist and they wont cook in the middle if they are to "plump".
Step Five.

Bake the suckers! As you have already pre-heated your oven at 180c your oven will be ready to go. These beautys only take 7 minutes to bake. Get them straight off the tray when they are done. You will need to use a metal spatula to get them off the trays as when they are just out of the oven they will be very soft. Cool them just on a flat bench or a very fine rack as they are very soft and you dont want them to fall apart. 

This Batch makes around 15 cookies

I hope that you love these cookies as much as we do. If I'm not careful peter can eat the whole batch in one night. They are Vegan friendly and gluten free as paleo don't eat grains etc. Enjoy
