My Seeded Bread...


Eating Paleo sometimes is hard when you just want something fast so here you go...

Ingredients...

3/4 cup Organic Coconut flour
1/4 cup Flax Meal
1/8 cup sesame seeds
1/8 cup Lin-seeds
2 Heaped Table spoons Ground Almond
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp Celtic sea salt
6 Large Eggs
1/4 Cup Coconut Oil
3 Tbsp Coconut Cream

Pre-Heat your oven to 180c

Step 1.

In a Large Mixing bowl Combine Coconut flour, Flax-Meal, Sesame seeds, Whole Lin-Seeds, Ground Almond, Baking powder, Baking Soda and Salt. Get your fingers in there and really mix all these ingredients together. You want the baking soda and baking powder to be right through this mix. 

Step 2.

Make a well in your dry ingredient and add 6 eggs, coconut oil, and coconut cream. Fold the dry through the wet untill they are a nice paste like form. 

Step 3.

Grease a Medium Size Loaf Tin with Olive oil spray and spoon the paste in. Make sure its all spread nicely in the tin and smooth the top nicely with the back side of your spoon.

Step 4.

Bake The Sucker! Easy As that. She'll take around 40 - 50 minutes dependent on your oven. You can use a skewer in the center of your loaf to ensure its cooked right through the middle.

I hope you enjoy this bread. I have it as toast in the morning, or packed full of all sorts as a sammie, and the list goes on.

  2. Will do! Lke I stated I have just started and will be trying to most most days! So there will be lots of different kinds of food! I'll do some cold set baking too!!

  3. This sounds excellent. I'd love to make a wheat-free bread, and the seeds sound awesome (I'm not sure what lin-seed is, is that related to linseed oil?) I can picture adding both white and black sesame seeds, and kalunji seeds (Indian). Could be fun to experiment.

  4. Linseed is flaxseed. Are you adding whole unground flaxseed or ground flaxmeal?

  5. Ok, i was wondering, i've made some breads with flax meal as well, and they all came out smelling rather, well... fishy. Any experience with this??
